Fresh Herbed White Fish

2 cloves garlic, minced
2T extra virgin olive oil
1/3c dry white wine (Pinot Grigio, Chardonnay)
1T fresh cilantro, chopped
1t fresh chives, chopped
10 3" sprigs fresh lemon thyme
dash Pepper Supreme (or pepper blend of your choice)
2 lb pollock, tilapia, or other mild, white-fleshed fish (if frozen, partially thaw)

Place fish on top of garlic, in olive oil and wine in heavy duty skillet. Add herbs and pepper to the top of the fish and cover. Cook on medium-high heat for 6-8 minutes (this will depend on the thickness of your fish). Liquid should simmer steadily. Fish is done when opaque and flaky. Using a large non-stick skillet with a glass lid will trap heat while allowing you to monitor the fish. When done, use a large, thin spatula to remove fish to serving platter and pour liquid back over top the fish. Serve immediately with your favorite vegetable. Our family loves this with broccoli or fresh green beans. Serves four.
